Camping Recipe

Rosemary-Lemon Salmon

  • 1 ½ pounds salmon fillets, skin removed
  • lemon pepper to taste
  • garlic powder to taste
  • salt to taste
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ⅓ cup water
  • ¼ cup vegetable oil
  • 1 lemon, quartered
  • 2 sprigs rosemary

  • Season salmon fillets with lemon pepper, garlic powder, and salt.
  • In a small bowl, combine soy sauce, brown sugar, water, and vegetable oil together and whisk until the sugar is dissolved.
  • Squeeze one quarter of the lemon into the sauce. Lightly crush the rosemary sprigs with the back of a wooden spoon and add directly to the mixture.
  • Place salmon fillets in a gallon size food storage bag and add the marinade – rosemary springs included! Seal, turn the bag to coat the fish, and stick it in the fridge for 2+ hours.
  • Preheat your grill to medium heat and lightly oil the grate.
  • Remove fish from the marinade and place on the hot grill. Discard the marinade.
  • Salmon cooks quickly – about 6-8 minutes per side. Grill until the fish flakes easily with a fork. Serve with a fresh squeeze of lemon juice, if desired. Enjoy!
