Zesty Potatoes & Sausage

Ingredients:

  • 1 lb smoked beef sausage
  • 2 bell peppers (I use one each of red and green)
  • 1 white onion
  • 16 oz frozen shredded hash browns
  • ¾ cup heavy cream
  • 1 can cheddar cheese soup
  • ½ cup sour cream
  • 1 packet Ranch dressing seasoning
  • 1 ½ cups shredded cheddar cheese
  • 2 Tbs cooking oil

Directions:

  • Dice the bell peppers and onion, and cut the sausage into bite-sized pieces.
  • Drizzle the oil in a large skillet, add the sausage, peppers, and onion, and lightly saute until the onions and peppers are tender.
  • Transfer sausage and onion/pepper mixture to the slow cooker and top with the entire package of frozen hashbrowns.
  • Whisk together the cheddar cheese soup, sour cream, heavy cream, and shredded cheese in a medium sized bowl. Pour this mixture over the hashbrowns and stir well to combine the entire contents of the slow cooker.
  • Put the lid on and cook on low heat for 3-4 hours.

This is a great recipe to double for families of 5-6 people or if you’re wanting leftovers for the next day. It makes an AMAZING breakfast when reheated! For a crispy, savory breakfast, I pull out a small skillet, lightly spray with nonstick spray, and pan-fry a serving size of the leftovers, flipping like a burger until it’s heated through and crisp on both sides.
